Garlic Sauce

In a perfect world there exists a savory sauce.

It pairs with every nationality of food. It is made of simple ingredients that are easy to have on hand. You can have this miracle sauce whipped up in 10 minutes tops. And it is as near to guilt free as you can get!

I have great news because we don’t have to wait for a perfect world to enjoy this perfect food.

 

I cannot take ANY credit for this yummy addition to my menus. The credit for this delightful concoction goes to a friend from church, Julie Mesa. I am thankful that she has shared it with me and has allowed me to share it with you!

 

The best part of this recipe is its adaptability. I have made the base with cashews, blanched almonds and even sunflower seeds.

 

How can you use this sauce?

-use it in layers of lasagna like it I did in this recipe here

-add a dollop to a soup recipe like this one

-use it as a topping on Mexican inspired dishes like tacos and burritos

-add some fresh chives and make it into a dip for carrots and celery

-drizzle some on top of steamed vegetables like broccoli

Ingredients 

½ cup blanched almonds OR sunflower seeds OR cashews (you pick!)

1 cup water

4 garlic cloves

1 tablespoon of onion powder

2 tablespoons of fresh lemon juice

2-3 tablespoons of oil

1 teaspoon of Himalayan salt

Directions

Place the nuts or seeds, water, salt, lemon juice, onion powder, and garlic in a high-speed blender*. Blend on high for about 2 minutes. While blender is still running, slowly drizzle in the oil. Continue to blend until you see that the consistency is firming up. It takes a few minutes. It also firms up more when it has been refrigerated.

The 4 cloves of garlic is really a suggestion, you can add more or you can add less, depending on your taste preference. Another fun flavor to add is smoked paprika!

Give this satisfying sauce a try! I think you will agree that it is the condiment your menu has been missing!

*The key to a smooth consistency is a high-speed blender such as a Ninja or Vitamix. If you don’t own one of these wonderful appliances, try soaking your seeds or nuts in water for a few hours to improve the texture. Even without a high speed blender the taste is terrific!
